1 avocado .
12 slices smoked salmon .
1 white onion .
24 medium sized king prawns .
18 oysters .
lemon wedges .
French dressing .
parsley .
50 g red caviar .
lemon juice .
2 (750 g) lobsters
Directions
Step #1 Cut lobsters in half lengthwise.
Step #2 Unsing fingers, ease meat out of tails in one piece.
Step #3 Wash two shells, toss meat in lemon juice, slice meat evenly, pile meat into shells.
Step #4 Arrange on serving paltter.
Step #5 Shell prawns, remove back vein, place on platter.
Step #6 Sprinkle top a little red caviar on each oyster, place on platter.
Step #7 Roll up salmon, place on serving platter, garnish with a few capers & onion rings.
Step #8 Decorate seafood platter with wedges of lemon, wedges of avocade tossed in french dressing & sprigs of watercress or parsley.
Step #9 Serve with your choice of sauces; we use bought Thousand Island & Tartare Sauce.
