Australian Seafood Platter Recipe

Ingredients
  • capers .
  • 1 avocado .
  • 12 slices smoked salmon .
  • 1 white onion .
  • 24 medium sized king prawns .
  • 18 oysters .
  • lemon wedges .
  • French dressing .
  • parsley .
  • 50 g red caviar .
  • lemon juice .
  • 2 (750 g) lobsters

Directions
  • Step #1 Cut lobsters in half lengthwise.
  • Step #2 Unsing fingers, ease meat out of tails in one piece.
  • Step #3 Wash two shells, toss meat in lemon juice, slice meat evenly, pile meat into shells.
  • Step #4 Arrange on serving paltter.
  • Step #5 Shell prawns, remove back vein, place on platter.
  • Step #6 Sprinkle top a little red caviar on each oyster, place on platter.
  • Step #7 Roll up salmon, place on serving platter, garnish with a few capers & onion rings.
  • Step #8 Decorate seafood platter with wedges of lemon, wedges of avocade tossed in french dressing & sprigs of watercress or parsley.
  • Step #9 Serve with your choice of sauces; we use bought Thousand Island & Tartare Sauce.
