Coconut Coffeecake Recipe

Ingredients
  • 1/2 c shredded coconut .
  • 1/2 c sliced nuts .
  • 1/4 c brown sugar, firmly packed .
  • 1 c shredded coconut .
  • 3 tbsps butter, softened .
  • 1/2 c unsifted all-purpose flour .
  • 1 (11 oz) can condensed cheddar cheese soup .
  • 1 tbsp grated lemon rind .
  • 1 (18 1/4 oz) box yellow cake mix .
  • 1/2 c crushed pineapple, drained .
  • 2 eggs .
  • 1/2 c water

Directions
  • Step #1 In a large mixing bowl mix the cake mix, water, soup, eggs, & lemon rind.
  • Step #2 Beat until mixed.
  • Step #3 Stir in 1 c of coconut, pineapple, & nuts.
  • Step #4 Spread the batter evenly in a greased & floured 9x13-inch pan.
  • Step #5 In another bowl, cut butter into the flour until crumbly.
  • Step #6 Stir in sugar & the remaining coconut.
  • Step #7 Sprinkle top over the batter.
  • Step #8 Bake in a 350 oven for 50 mins or until done.
