Ingredients
1 tbsp olive oil .
1/2 tsp sesame oil .
2 tbsps lime juice .
2 tbsps extra virgin olive oil .
1/4 tsp lime zest .
2 tbsps fresh cilantro, minced .
1 tsp ginger .
Rice .
Scenter Flavor Center .
Dressing .
1/3 c rice .
1/2 sweet red pepper .
1 tbsp soy sauce .
1/8 tsp black pepper .
1/2 c frozen peas .
6 drops lime juice .
2 tbsps scallions, sliced .
1 tbsp soy sauce .
1 tsp dried cilantro .
2 tbsps fresh cilantro, minced .
6 drops sesame oil .
2 frozen boneless skinless chicken breasts .
2/3 c water .
2 tbsps onions, finely sliced
Directions
Step #1 Note to make this recipe for three people use three small chicken breasts & increase the rice to 1/2 c & 1 c of water.
Step #2 Fill your base to the high water mark.
Step #3 Place pepper, cilantro & zest in flavor center.
Step #4 Put rice & water in a c - Like a large coffee c or other similair size c.
Step #5 Put this c inside the steamer basket.
Step #6 Put the frozen peas & onions in the bowl divder basket.
Step #7 Place the the bowl divider beside the rice c.
Step #8 Steam for 8 mins.
Step #9 While the peas are cooking, prepare the dressing by combining all the dressing ingredients.
Step #10 Set aside.
Step #11 Add the red pepper to the peas & onions.
Step #12 Steam 5 more mins.
Step #13 Remove bowl divider & veggies from steamer.
Step #14 Set aside.
Step #15 Put chicken in steamer.
Step #16 Steam 40-45 mins or until done.
Step #17 If chicken is thawed then cook rice an extra 20 mins before adding chicken & cook for 20-25 mins.
Step #18 Mix rice with pea mixture & remaining rice ingredients.
Step #19 Serve chicken over rice with dressing on top.
Step #20 Serve with traditional Chinese side dishes such as egg drop soup & fortune cookies.
