Pork And Edamame Fried Rice Recipe

Ingredients
  • 1/4 tsp pepper .
  • 1/2 c carrots, shredded .
  • 1/2 c edamame, shelled .
  • 1 1/2 tbsps rice vinegar, seasoned .
  • 3/4 c green onions, diagonally cut .
  • 1/2 c red bell peppers, sliced .
  • 1 tbsp ginger, minced .
  • 6 oz pork tenderloins, cut in thin strips .
  • 2 tbsps cilantro, sliced .
  • 1 (3 1/2 oz) bag boil-in-the-bag rice .
  • 1/2 c low sodium chicken broth .
  • 2 tbsps low sodium soy sauce .
  • 3 tbsps vegetable oil, divided .
  • 2 tbsps dry roasted peanuts .
  • 3 garlic cloves, minced .
  • 1 tbsp chili sauce, such as Sriracha,not American chili sauce .
  • 1/2 tsp salt

Directions
  • Step #1 Cook rice according to pkg.
  • Step #2 Set aside to cool.
  • Step #3 Heat 1/2 t oil in a wok or large skillet over med-high.
  • Step #4 Add ginger & garlic; saute 1 min Add pork; saute 3 min or til pork loses its pink.
  • Step #5 Place pork mixture In a large-ish bowl; cover to keep warm.
  • Step #6 Add 1 t oil to pan.
  • Step #7 Add edamame & carrot; saute 2 min Add onion & bell pepper; saute 2 min Add carrot mixture to pork; cover.
  • Step #8 Heat remaining 2 1/2 T oil in pan.
  • Step #9 Add rice & soy sauce; saute 3 min Return pork & veggies to pan.
  • Step #10 Add broth & next 5 ingredients.
  • Step #11 Cook 2 min or til heated through.
  • Step #12 Top with peanuts.
