Potato Cheddar Soup With Broccoli And Cauliflower Recipe

Ingredients
  • 8 oz broccoli .
  • 1/4 tsp ground black pepper .
  • 1 tbsp minced garlic (6 cloves) .
  • 2 onions, sliced .
  • 1 c shredded cheddar cheese (4 oz.) .
  • 2 carrots, peeled & coarsely sliced .
  • 2 1/2 lbs potatoes, peeled & quartered .
  • 1 tbsp olive oil .
  • 8 oz cauliflower .
  • 1 tsp kosher salt .
  • 5 c chicken stock or chicken broth .
  • 3/4 c whipping cream .
  • 1 tbsp butter .
  • 3/4 c milk

Directions
  • Step #1 In a Dutch oven cook onions in hot oil & butter until soft & golden brown.
  • Step #2 Add garlic & continue cooking.
  • Step #3 Add potatoes, carrots, & chicken stock.
  • Step #4 Bring to boiling; reduce heat.
  • Step #5 Cover up & let simmer for 1 hr.
  • Step #6 Meanwhile, separate broccoli into small flowerets (reserve) & tender stems, discarding tough stems.
  • Step #7 Coarsely chop tender stems.
  • Step #8 Core & separate cauliflower into small flowerets.
  • Step #9 Add broccoli stems & cauliflower to potato mixture.
  • Step #10 Cover up; simmer 45 mins.
  • Step #11 Add broccoli flowerets & cook, covered, for 15 mins more.
  • Step #12 Add milk, cheese, salt, cream, & pepper to vegetable mixture.
  • Step #13 Lightly puree with a potato masher until coarsely mixed to desired texture.
  • Step #14 Add water, if needed, to desired consistency.
  • Step #15 Note: I use an immersible mixer.
