Ingredients
  • 1 small onion, trimemd & quartered .
  • 1 c flour .
  • 1/2 c buttermilk .
  • 2 large egg whites, beaten until stiff .
  • 1/4 tsp baking soda .
  • 1/8 tsp pepper .
  • 1 tbsp chives, minced .
  • 1/2 tsp baking powder .
  • 1 tsp sugar .
  • 1 large egg, beaten .
  • 1/8 tsp salt .
  • 1 medium sweet red pepper, quartered .
  • 6 mushrooms, trimmed & sliced

Directions
  • Step #1 In a large bowl, stir this together flour, baking powder, baking soda & sugar.
  • Step #2 In a small bowl, stir this together egg & buttermilk.
  • Step #3 Stir into flour mixture.
  • Step #4 By hand or in a food processor/blender, onion & chives, msuhrooms, mince together epper, then add to flour mixture.
  • Step #5 Gently fold in egg whites.
  • Step #6 Spice up to taste.
  • Step #7 Warm a large, nonstick skillet (coated with cooking spray) over med-heat/flame.
  • Step #8 Drop fritters by heaping tbsps onto skillet, allowing an inch between fritters.
  • Step #9 Cook 3 mins to 5 mins on one side, flip & cook this until cooked through (about another 2-3 mins).
  • Step #10 Points figured about 5 fritters per serving.
