Portobello Vinaigrette Salad Recipe

Ingredients
  • 1 tbsp fresh parsley, sliced .
  • 1/4 tsp dried oregano (more if fresh) .
  • 6 portabella mushrooms .
  • 1/2 c extra virgin olive oil .
  • 1/4 tsp dried thyme (more if fresh) .
  • 4 garlic cloves, minced .
  • 6 c salad greens .
  • 1 tsp salt .
  • 1 red onion (medium, thickly sliced) .
  • 3 tomatoes, cut into wedges .
  • 1/2 c balsamic vinegar

Directions
  • Step #1 Remove mushrooms stems & discard.
  • Step #2 Cut mushrooms into slices.
  • Step #3 Combine vinegar, herbs, garlic & salt.
  • Step #4 Pouring in a steady stream, whisk in olive oil.
  • Step #5 Reserve 1/4 c for dressing.
  • Step #6 Place mushrooms in dressing & marinade for one hr.
  • Step #7 Preheat grill to medium.
  • Step #8 Brush onion with oil & grill 10 mins, turning once.
  • Step #9 In a large salad bowl, toss together greens, tomatoes & dressing.
  • Step #10 Divide onto 6 salad plates & top wth mushroom slices.
  • Step #11 Note: the mushrooms themselves can also be grilled, but it gives a different taste to the salad.
