Sausage Risotto Recipe

Ingredients
  • 425F g crushed tomatoes .
  • 1 large carrot, sliced .
  • 3 c chicken stock .
  • 1/2 c frozen carrots .
  • 1 tsp garlic .
  • 1 onion, sliced .
  • 1 1/2 c arborio rice .
  • 2 tbsps oil .
  • 6 chicken sausages or beef sausages or pork sausage .
  • 1 tbsp worcestershire sauce .
  • 1/2 c frozen peas .
  • 1/2 c frozen green beans

Directions
  • Step #1 In a large & deep fry pan/skillet that has a lid, add the oil.
  • Step #2 On a medium high heat, add & fry the sausages.
  • Step #3 When cooked remove & chop sausages into bite size wheels.
  • Step #4 Do not remove the oil from the pan.
  • Step #5 Add the onions to the oil & fry until translucent (about 2-3 mins).
  • Step #6 Add the rice & stir this to get coated in the oil.
  • Step #7 Add all the remaining ingredients (including the sausages).
  • Step #8 Turn the heat down to a low simmer & cover with the lid.
  • Step #9 Simmer for 35-45 mins, do not lift lid & check until at least 35 mins.
  • Step #10 Check to see if the rice is cooked at 35 mins, cook a little more if required.
