My Favorite Lentil Soup Recipe

Ingredients
  • 28 oz sliced canned tomatoes with juice .
  • pepper .
  • 1 1/2 c lentils (rinsed in 4 changes of water) .
  • 3/4 tsp thyme .
  • 3/4 tsp marjoram .
  • salt .
  • 2 tbsps olive oil .
  • 3/4 c white wine .
  • 1 c grated cheddar cheese, cheese. (optional) .
  • 3 carrots, grated .
  • 7 c chicken broth or vegetable broth or beef broth .
  • 1/3 c finely sliced parsley .
  • 2 onions, sliced

Directions
  • Step #1 Sautee onions in olive oil until soft.
  • Step #2 Add carrots, marjoram & thyme, then sautee for an extra 5 mins.
  • Step #3 add wine, canned tomatoes, broth & lentils.
  • Step #4 Bring to a boil, cover & let simmer for 1 hr or until the lentils are tender.
  • Step #5 Add salt & pepper to taste along with sliced parsley.
  • Step #6 Simmer a couple of mins.
  • Step #7 Serve with grated cheddar cheese on top.
  • Step #8 To make Vegetarian use Vegetable broth.
  • Step #9 To make this a vegan dish, skip the cheddar cheese.
