- 3 tbsps low-fat sour cream .
- 1/4 small red onion (minced) .
- 15 oz black beans (rinsed & drained, approx. 1 1/3 c) .
- 1 garlic clove (minced) .
- 1/2 tsp cumin .
- 1 tbsp lemon juice
Directions
- Step #1 Place beans in medium bowl & mash until smooth.
- Step #2 Add sour cream, juice, garlic, & cumin; mix well.
- Step #3 Mix in minced onion & cilantro.
- Step #4 Spice up with salt & pepper to taste.
- Step #5 Transfer to small bowl & put in the fridge 30 mins.
- Step #6 Garnish with sliced scallions & serve.
