Step #2 Spice up the chicken on all sides with the salt & pepper & place this in a baking dish.
Step #3 Dot the top of the skin with the butter & place this in the oven on the center rack.
Step #4 Roast for 10 mins.
Step #5 Mix the marmalade, hot sauce, soy sauce, sesame oil, & cayenne pepper together in a small bowl & use it to baste the chicken frequently until the meat reaches 167F-about 20 more mins.
Step #6 Adjust oven to broil, sprinkle the sesame seeds over the chicken & broil until seeds are toasted & skin is crispy- about 1 min.
Step #7 Remove chicken from the oven & let rest for 15 mins.
Step #8 Bring the basting sauce to a boil & cook for 1 min.
Step #9 Remove from the heat & let cool.
Step #10 Cut the skin & pith from the oranges & slice into 1/4-inch-thick rounds.
Step #11 Remove any seeds.
Step #12 Slice the chicken & place equal amounts of it, the oranges, & lettuce leaves inside the pitas.
Step #13 Drizzle each sandwich with the boiled sauce.
