Swiss Chard Stir Fry Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • For the stir fry .
  • 1 tbsp sesame oil .
  • For the sauce .
  • 250 g swiss chard .
  • 200 g shiitake mushrooms, halved .
  • 1 tbsp clear honey .
  • 2 tsps cornflour .
  • 150 g flat rice noodles .
  • 1 red pepper, deseeded & sliced .
  • 3 tbsps light soy sauce .
  • 6 tbsps vegetable stock .
  • 227 g water chestnuts, drained & sliced .
  • 1 orange bell pepper, deseeded & sliced

Directions
  • Step #1 Mix all the sauce ingredients until smooth.
  • Step #2 Cook the rice noodles according to the packet.
  • Step #3 drain & rinse under cold water, then set aside.
  • Step #4 Separate the leaves & stalks of the chard & shred the leaves.
  • Step #5 (You may also finely chop the stems & add them is you wish).
  • Step #6 heat the oil in a wok & add the mushrooms & chard stalks (if using) & stir fry for 1 min.
  • Step #7 Add the garlic, peppers & chard leaves & fry for a further 2 mins.
  • Step #8 Add water chestnuts & sauce & stir fry for 2 mins.
  • Step #9 Add noodles, mix well & serve.
