Ingredients
  • 1 c tomatoes, sliced .
  • Filling .
  • 1 lb ground chuck .
  • 1 lb pork sausage .
  • 1 (4 1/2 oz) can sliced green chilies .
  • Topping .
  • 1 (10 oz) can green enchilada sauce .
  • 2-3 c texas red enchilada sauce (1 batch Texas Red Enchilada Sauce) .
  • 1 c refried beans .
  • 1/4 c onions, sliced .
  • 8-12 flour tortillas .
  • 1 lb cheddar cheese, shredded .
  • 1/4 c onions, minced

Directions
  • Step #1 Prepare enchilada sauce as directed - leave in pad, set aside.
  • Step #2 Topping:.
  • Step #3 Crush tomatoes, add chilis & onion.
  • Step #4 Mix well.
  • Step #5 Filling:.
  • Step #6 Brown sausage, ground chuck & sliced onion In a large-ish skillet.
  • Step #7 Drain excess fat.
  • Step #8 Add green chili sauce & refried beans, mix until mixed.
  • Step #9 Prepare a 13 x 9 dish by placing a thin layer of the enchilada sauce on the bottom to prevent the food from sticking.
  • Step #10 Fill each tortill with approximately 1/3 c of filling, top this with shredded cheese.
  • Step #11 Roll up tortilla cigar fashion & place seam side down in dish.
  • Step #12 Top with the remaining sauce, sprinkle with cheese.
  • Step #13 Bake 10-15 mins until cheese melts.
  • Step #14 Serve with topping & sour cream if desired.
