Asian Scallop And Snap Pea Salad Recipe

Ingredients
  • 2 tsps sesame seeds, toasted .
  • 1 tbsp oyster sauce .
  • 1/2 c carrots, cut into matchsticks .
  • 1 lb sugar snap peas, trimmed .
  • 1 tbsp minced fresh ginger .
  • 1 tbsp sugar .
  • 2 tsps toasted sesame oil .
  • 1 tbsp soy sauce .
  • 1 tbsp minced fresh garlic .
  • 10 u - 10 scallops .
  • 1/2 c drained sliced water chestnuts .
  • 1/2 c sliced mushrooms, slightly sauteed .
  • 1/2 c julienne cut red bell peppers .
  • salt .
  • 1/4 tsp crushed red pepper flakes

Directions
  • Step #1 To prepare dressing, heat oil in a small sauce pan over med heat, add ginger; sauté 2 mins.
  • Step #2 Add garlic & red pepper, cook 1 min more.
  • Step #3 Stir in oyster sauce, soy sauce, sugar & salt bring to a simmer.
  • Step #4 Remove from heat, cool.
  • Step #5 Sautee the mushrooms in a little broth, wine or water just until cooked.
  • Step #6 To prepare the salad, steam or cook peas in boiling water 30 seconds.
  • Step #7 Drain & rinse in cold water.
  • Step #8 Combine blanched peas & remaining ingredients except sesame seeds.
  • Step #9 Drizzle dressing over salad, toss well.
  • Step #10 Sprinkle top with toasted sesame seeds.
  • Step #11 Heat saute pan until hot.
  • Step #12 Sear Scallops 4 mins on each side.
