Magnificent Mocha Macadamia Nut Brownies Recipe

Ingredients
  • Ingredients For Brownies .
  • 6 oz sweet baking chocolate, sliced .
  • 1 (8 oz) can crushed pineapple, drained .
  • 3 oz cream cheese, softened to about room temp .
  • 1/4 c granulated sugar .
  • 1 tbsp all-purpose flour .
  • 1/2 tsp pure vanilla extract .
  • 1/2 tsp baking powder .
  • 2 large eggs .
  • 2 tbsps unsalted butter, softened to about room temp .
  • 3 tbsps unsalted butter, softened to about room temp .
  • 1/4 tsp almond extract .
  • 1/4 c sliced macadamia nuts .
  • 1/4 tsp salt .
  • 1 c semi-sweet chocolate chips .
  • 1/2 c granulated sugar .
  • Ingredients For Cream Cheese Filling .
  • 1 large egg .
  • 2 tsps pure vanilla extract .
  • 2 tbsps coffee, brewed strong .
  • 1/2 c all-purpose flour

Directions
  • Step #1 Cream Cheese Filling:.
  • Step #2 In a medium size bowl, beat the cream cheese & butter together until light & fluffy.
  • Step #3 Add the sugar into this slowly & beat until the sugar is well incorporated.
  • Step #4 Beat in the egg then mix in the flour, pineapple & vanilla.
  • Step #5 Set mixture aside.
  • Step #6 Directions For Brownies: Preheat oven to 350°F Lightly butter an 8-inch square nonstick baking pan.
  • Step #7 In a heavy, small sauce pan, heat together the baking chocolate & butter over low heat/flame until the mixture is smooth.
  • Step #8 Remove the pan from the heat & cool slightly.
  • Step #9 In a large bowl, beat together the eggs & sugar until they are slightly thickened.
  • Step #10 This should take 2 mins.
  • Step #11 Mix in the flour, baking powder & salt then add the chocolate-butter mixture & the vanilla & almond extracts.
  • Step #12 Stir in chocolate chips & macadamia nuts.
  • Step #13 Pour about 1 1/4 c of the chocolate batter in the prepared pan then use a rubber spatula to spread the cream cheese mixture over chocolate batter.
  • Step #14 Take a large spoon & carefully place the remaining chocolate batter over top of cream cheese mixture.
  • Step #15 Using the pointed tip of a knife, carefully make swirls by making large S shapes for a marbled design through the batter.
  • Step #16 Bake for 30 mins or until tester toothpick inserted into center comes out with only a few moist crumbs attached.
  • Step #17 Remove the pan from the oven, place on a rack, & allow this to cool.
  • Step #18 When cool to the touch, take a sharp knife & cut them into squares.
