Mom's Cheesy Broccoli Rice Casserole Recipe

Ingredients
  • 10 oz frozen sliced broccoli, microwaved about 6 mins to thaw .
  • 1 (5 oz) can Carnation Evaporated Milk .
  • 1 onion, sliced .
  • 1/2 c celery, sliced .
  • 2 (10 1/2 oz) cans cream of chicken soup .
  • 2 1/2 c sharp cheddar cheese, shredded & divided .
  • 2 tbsps butter .
  • 1/2 tsp salt .
  • 1/2 tsp pepper .
  • 2 c cooked rice .
  • 1 (5 oz) can Tyson premium chunk chicken (I sometimes use 2 or the large can when I'm treating this as a one-dish meal)

Directions
  • Step #1 Saute onions & celery in butter until soft.
  • Step #2 Add chicken, salt, & pepper.
  • Step #3 Saute a min or so to marry flavors.
  • Step #4 In a large bowl, broccoli, milk, mix soups, rice, onion/chicken mixture.
  • Step #5 Fold in 2 c cheese.
  • Step #6 Pour into a greased 2 quart casserole dish.
  • Step #7 Top with remaining 1/2 c cheese (I sometimes use more -- it's terrible, I know! ;).
  • Step #8 Bake at 350 degrees for 30-40 mins uncovered.
