Grilled Vegetable Salad With Oregano Dressing Recipe

Ingredients
  • 2 yellow capsicums (yellow peppers) .
  • 2 tbsps red wine vinegar .
  • 150 g feta cheese, crumbled .
  • 12 green onions, trimmed .
  • 2 tbsps baby capers, rinsed & drained .
  • 1/2 c olive oil .
  • Oregano Dressing .
  • 1 tbsp fresh oregano, finely sliced .
  • 400F g pumpkin .
  • 1 tbsp pine nuts, toasted (optional) .
  • 2 red capsicums (red peppers) .
  • 3 zucchini .
  • salt .
  • 2 garlic cloves, crushed

Directions
  • Step #1 For Oregano Dressing - Place all ingredients in a screw top jar & shake well to mix, set aside.
  • Step #2 For Vegetables - Peel & thickly slice pumpkin; quarter zucchini length ways; thickly slice both types of peppers (capsicum).
  • Step #3 Brush vegetables with half the oregano dressing & sprinkle with a little salt.
  • Step #4 Cook vegetables on heated barbeque grill(medium heat), turning until just tender & with slight char lines.
  • Step #5 (vegetables can be cooked in batches if your barbeque is small).
  • Step #6 Arrange vegetables on serving platter & sprinkle with crumbled fetta, capers & pine nuts (if using).
  • Step #7 Drizzle over remaining dressing.
