Minestrone Alla Milanese Recipe

Ingredients
  • 28 oz crushed plum tomatoes .
  • 3 tbsps butter .
  • 1 c ditalini .
  • 42 oz beef broth .
  • 1/4 tsp pepper .
  • 1/2 tsp salt .
  • 1/2 lb cabbage, shredded .
  • 16 oz cannellini beans .
  • 3 stalks celery, coarsely sliced .
  • 1/4 lb green beans, cut in 1 inch pieces .
  • 3 carrots, coarsely sliced .
  • 1 garlic clove, minced .
  • 1 bay leaf .
  • 2 medium zucchini, sliced .
  • 1/4 tsp rosemary .
  • 1 large potato, peeled & large sliced .
  • 1 1/2 c water .
  • 2 onions, sliced .
  • 1/2 tsp basil

Directions
  • Step #1 Heat butter in 6 quart stock pot over med-heat/flame.
  • Step #2 Add onions; cook & stir 6-8 mins until soft & golden, but not brown.
  • Step #3 Stir in carrots & potato; cook & stir 5 mins.
  • Step #4 Add celery, green beans, zucchini, cabbage & garlic; cook & stir 5 mins.
  • Step #5 Add broth, water & tomatoes to pot.
  • Step #6 Stir in all spices.
  • Step #7 Bring to a boil over high heat; reduce to low.
  • Step #8 Cover up & let simmer 1 1/2 hrs, stirring every once in awhile.
  • Step #9 Rinse & drain cannelini beans; add to pot along with pasta.
  • Step #10 Uncover & cook over medium-low heat 30 mins until soup thickens, stirring every once in awhile.
  • Step #11 Remove bay leaf.
