Cool Taco Salad Recipe

Ingredients
  • 1/2 lb lean ground beef .
  • 1 c lettuce .
  • 2 tbsps reduced-fat cream cheese, at about room temp .
  • 2 tbsps salsa .
  • 1/4 c reduced-fat cheddar cheese, shredded .
  • 2 tsps taco seasoning mix, divided .
  • 1 tbsp water .
  • 2 whole wheat pita bread .
  • 1 tomato, sliced .
  • 2 tbsps nonfat sour cream

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 In a medium skillet, brown ground beef over med-heat/flame until no longer pink.
  • Step #3 Drain off excess fat.
  • Step #4 Add water & 1 tsp taco seasoning to the beef & let simmer for 3 mins.
  • Step #5 Remove from heat & set aside to cool slightly.
  • Step #6 Cut each pita into 8 wedges & place on baking sheet.
  • Step #7 Bake for about 7 mins or until lightly browned.
  • Step #8 While the beef is cooling, cream cheese, mix the remaining taco seasoning, sour cream & salsa in a small bowl.
  • Step #9 Mix well.
  • Step #10 Divide & spread this mixture evenly on 2 small plates.
  • Step #11 Spoon a portion of the beef over the sour cream mixture, & top each with half the lettuce, tomato & cheddar cheese.
  • Step #12 Place 8 baked pita wedges on each plate.
