Ginger Cookie Squares Recipe

Ingredients
  • 1 egg, lightly beaten .
  • 1/3 c molasses .
  • 2 c flour .
  • 1/4 tsp salt .
  • 1 1/2 tsps ground ginger .
  • 1/2 tsp baking soda .
  • 1/8 tsp black pepper (optional) .
  • 1/3 c butter .
  • 1/3 c packed brown sugar (sifted) .
  • 1/8 tsp ground cloves .
  • powdered sugar (optional) .
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 375*.
  • Step #2 Melt molasses & butter in saucepan, over low heat/flame.
  • Step #3 Pour into large bowl & cool to about room temp.
  • Step #4 Combine dry ingredients in a medium bowl.
  • Step #5 Set aside.
  • Step #6 Stir egg into cooled molasses mixture.
  • Step #7 Stir dry ingredients into molasses mixture.
  • Step #8 The batter will be stiff.
  • Step #9 Divide dough in half.
  • Step #10 On waxed paper shape each dough half into a 1 1/2" square log, about 5 1/2" long.
  • Step #11 Wrap & freeze 30 mins or until firm enough to slice.
  • Step #12 Slice logs into 1/8 inch slices.
  • Step #13 Bake 1 inch apart on ungreased cookie sheets.
  • Step #14 Prick each several times with a fork.
  • Step #15 Bake for 8 to 10 mins or until edges are firm & lightly browned.
  • Step #16 Transfer to wire racks.
  • Step #17 Cool completely.
  • Step #18 Sprinkle top with powdered sugar.
