Asparagus Quiche Recipe

Ingredients
  • 1 egg white, lightly beaten .
  • salt & pepper .
  • 7/8 g ground nutmeg .
  • 2 (8 inch) unbaked pie shells .
  • 10 slices bacon .
  • 4 eggs .
  • 455 g fresh asparagus, trimmed & cut into 1/2 inch pieces .
  • 355 ml half-and-half cream .
  • 215 g shredded swiss cheese

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Place asparagus in a steamer over 1 inch of boiling water, & cover.
  • Step #3 Cook until tender but still firm, about 2 to 6 mins.
  • Step #4 Drain & cool.
  • Step #5 Place bacon In a large-ish, deep skillet.
  • Step #6 Cook over medium high heat until evenly brown.
  • Step #7 Drain, crumble & set aside.
  • Step #8 Brush pie shells with beaten egg white.
  • Step #9 Sprinkle top crumbled bacon & sliced asparagus into pie shells.
  • Step #10 In a bowl, beat together eggs, cream, nutmeg, salt & pepper.
  • Step #11 Sprinkle top Swiss cheese over bacon & asparagus.
  • Step #12 Pour egg mixture on top of cheese.
  • Step #13 Bake uncovered in preheated oven until firm, about 35 to 40 mins.
  • Step #14 Let cool to about room temp before serving.
