Chicken Fajitas Recipe

Ingredients
  • 2 tsps canola oil .
  • 8 oz boneless skinless chicken breasts, cut into thin strips .
  • 1-2 lime, juice of .
  • 1 medium red onion, sliced .
  • 1 tsp ground red pepper or chili powder .
  • 1 garlic clove, minced .
  • 1 red bell pepper or green bell pepper, seeded & sliced

Directions
  • Step #1 In a shallow dish, mix lime juice, 1 tsp oil, & red pepper or chili powder.
  • Step #2 Add chicken breast strips & toss to coat.
  • Step #3 Set aside for 10 mins to marinate.
  • Step #4 Heat remaining 1 tsp oil in a heavy skillet over medium-high heat.
  • Step #5 Add onions & peppers & saute for about 8 mins, until they soften.
  • Step #6 Add garlic & cook 1 min.
  • Step #7 Increase heat to high.
  • Step #8 Add chicken strips & saute until the chicken is cooked through, about 4 mins.
