Broccoli Rabe Hummus & Roasted Red Pepper & Olive Pizza Recipe

Ingredients
  • 1/2 c grated romano cheese .
  • 9 c broccoli rabe, stems removed & triple rinsed & drained (1 large bunch) .
  • 6 oz kalamata olives, pitted, sliced .
  • Broccoli Rabe .
  • 1/4 c prepared pesto sauce .
  • Broccoli Rabe Hummus Pizza .
  • Roasted Red Pepper Kalamata Olive Pizza .
  • Hummus .
  • 1/4 c water .
  • 4 quarts water .
  • 1/4 c water .
  • 1/2 c grated romano cheese .
  • 4 large garlic cloves, minced .
  • 1/4 c prepared pesto sauce .
  • 1/2 tsp hot red pepper flakes .
  • 3/4 c extra-virgin olive oil .
  • salt .
  • 15 1/2 oz chickpeas, rinsed & drained .
  • 14 oz fire roasted red peppers, sliced (1 can) .
  • 16 mini whole wheat sodium-free pita bread

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 In a 6 quart stockpot, heat 4 quarts of salted water to boiling.
  • Step #3 Blanch broccoli rabe in stock pot.
  • Step #4 Drain & set aside.
  • Step #5 Hummus:.
  • Step #6 In a large skillet, heat 1/4 c oil & brown garlic.
  • Step #7 Remove garlic & oil to a food processor/blender.
  • Step #8 Add chick peas, 1/4 c water, pesto & process until smooth.
  • Step #9 Add 1/4 c olive oil to the food processor/blender while motor is running, allowing mixture to mix well.
  • Step #10 Broccoli Rabe Saute:.
  • Step #11 Finely chop the reserved broccoli rabe.
  • Step #12 Heat 1/4 c oil in skillet over med-heat/flame.
  • Step #13 Add broccoli rabe, 1/4 c water, & red pepper flakes.
  • Step #14 Saute until all liquid is evaporated & rabe is tender, approximately 5 mins.
  • Step #15 Pizza:.
  • Step #16 Slice each pita pocket in half horizontally.
  • Step #17 Spread hummus on the rough side of pita.
  • Step #18 Top with small amount of broccoli rabe.
  • Step #19 Sprinkle top with grated cheese.
  • Step #20 Roasted Pepper Kalamata Olive Pizza:.
  • Step #21 Spread pesto on rough side of pita pockets.
  • Step #22 Top with peppers & olives.
  • Step #23 Sprinkle top with grated cheese.
  • Step #24 Assemble pita pizzas on baking sheet.
  • Step #25 Bake in 400F degree oven for 10 mins, until edges are golden brown.
