Mincemeat With Dried Fruit Recipe

Ingredients
  • 3/4 c brown sugar, packed .
  • 1 1/4 c dark rum .
  • 1 1/2 c pitted dates, quartered .
  • 1/4 tsp nutmeg .
  • 1 1/2 tsps ground cinnamon .
  • 1/4 tsp allspice .
  • 1/4 c apple syrup (see my recipe for Apple Cider Syrup) .
  • 1/4 tsp ginger .
  • 2 c apple juice .
  • 1 1/2 c golden raisins .
  • 1 1/2 c dark raisins .
  • 1 1/2 c dried apricots, sliced .
  • 1/3 c dark corn syrup .
  • 7 tbsps unsalted butter .
  • 1 1/2 c dried peaches, sliced .
  • 1 1/2 c dried currants

Directions
  • Step #1 In large mixing bowl, peaches, currants, mix both raisins, apricots & dates.
  • Step #2 Set aside.
  • Step #3 In large nonreactive saucepan, nutmeg, then stir in the corn syrup, allspice & ginger, mix cinnamon, brown sugar, rum, apple cider syrup & apple juice.
  • Step #4 Add butter & bring to boil over med-heat/flame.
  • Step #5 Boil 3 mins.
  • Step #6 Pour hot liquid over dried fruit & stir.
  • Step #7 Cool to about room temp.
  • Step #8 When COMPLETELY cooled, pour/spoon equal amounts into 3 clean quart glass jars, seal tightly & put in the fridge up to 12 months.
