1/4 c apple syrup (see my recipe for Apple Cider Syrup) .
1/4 tsp ginger .
2 c apple juice .
1 1/2 c golden raisins .
1 1/2 c dark raisins .
1 1/2 c dried apricots, sliced .
1/3 c dark corn syrup .
7 tbsps unsalted butter .
1 1/2 c dried peaches, sliced .
1 1/2 c dried currants
Directions
Step #1 In large mixing bowl, peaches, currants, mix both raisins, apricots & dates.
Step #2 Set aside.
Step #3 In large nonreactive saucepan, nutmeg, then stir in the corn syrup, allspice & ginger, mix cinnamon, brown sugar, rum, apple cider syrup & apple juice.
Step #4 Add butter & bring to boil over med-heat/flame.
Step #5 Boil 3 mins.
Step #6 Pour hot liquid over dried fruit & stir.
Step #7 Cool to about room temp.
Step #8 When COMPLETELY cooled, pour/spoon equal amounts into 3 clean quart glass jars, seal tightly & put in the fridge up to 12 months.
