Chile Basil Sesame Chicken Recipe

Ingredients
  • 1 lb skinless, boneless chicken breasts
  • 1 tsp sesame oil
  • 1/4 c sliced fresh basil
  • 1 tbsp olive oil
  • 2 tsps toasted sesame seeds
  • 2 whole dried chile peppers, cut in half
  • 1/2 c low-sodium, low-fat chicken broth
  • 1/2 c light soy sauce

Directions
  • Step #1 To Marinate: In a medium nonporous glass dish or bowl mix the soy sauce, chicken broth, sesame oil, olive oil, sesame seeds, chile peppers & basil.
  • Step #2 Mix well & add chicken.
  • Step #3 Turn to coat, cover dish or bowl & put in the fridge to marinate for up to 24 hrs.
  • Step #4 Preheat grill to high heat with the grate set 6 inches from the heat source, & lightly oil grate.
  • Step #5 Remove chicken from dish, discarding any leftover marinade.
  • Step #6 Grill chicken over high heat for 7 mins per side or until cooked through & no longer pink inside.
