Spinach Frittata With Parmesan Cheese Recipe

Ingredients
  • 3 eggs, lightly beaten, can use 3/4 c liquid egg substitute .
  • 1 tsp olive oil .
  • 1 dash black pepper .
  • 1 tsp corn oil .
  • 1 tbsp onions, minced .
  • 1 c spinach, cooked, sliced, & well drained .
  • 1/4 c parmesan cheese, grated, can use Romano, divided .
  • 1/2 tsp oregano

Directions
  • Step #1 Heat the oils in an omelette pan that is ovenproof.
  • Step #2 Add the onion & cook this until clear & tender.
  • Step #3 In a bowl, mix the eggs with half of the cheese, the oregano, pepper & spinach & mix well.
  • Step #4 Pour this egg mixture into the skillet with the onion & cook over very low heat until the edges are lightly browned.
  • Step #5 Sprinkle top the remaining cheese over the top & place under the broiler until the cheese is lightly browned.
  • Step #6 To serve, cut into wedges.
