Chilled Orange Borscht Recipe

Ingredients
  • 1 c fat-free sour cream
  • 3 tbsps sliced chives
  • 1 (16 oz) jar pickled beets
  • 1 1/2 c plain fat-free yogurt (reserve 1/2 c for garnish)
  • 1 pinch Salt & pepper, to taste
  • 1 1/2 c orange juice
  • 3 tbsps lemon juice

Directions
  • Step #1 In a mixer, orange & lemon juices, puree beets, & 1 c yogurt.
  • Step #2 Add salt & pepper.
  • Step #3 Chill two hrs or more.
  • Step #4 To serve, top this with a dollop of reserved yogurt & the chives.
  • Step #5 To serve, top this with a dollop of reserved yogurt & the chives.
