Babycorn Paneer Masala (cottage Cheese Babycorn Curry) Recipe

Ingredients
  • 2 inches piece gingerroot (peeled) .
  • 2 tsps coriander powder .
  • 12-15 almonds .
  • 1 tbsp dry ground fenugreek (kasuri methi) .
  • 2 medium sized onions (roughly sliced) .
  • 1 tsp red chili powder .
  • 10-12 baby corn (sliced thinly) .
  • 3 tbsps oil .
  • 1/2 tsp cumin powder .
  • 2 c tomato puree .
  • 200 g cottage cheese (paneer) .
  • 3-4 red chilies, whole .
  • 1 tsp garam masala powder .
  • 4-5 garlic cloves (roughly sliced) .
  • salt

Directions
  • Step #1 Cut paneer into one inch sized triangular pieces.
  • Step #2 Chop half of the ginger & cut the remaining half into julienne.
  • Step #3 Reserve these for garnishing.
  • Step #4 Grind red chillies, onions, almonds, garlic & ginger into a fine paste using half a c of water.
  • Step #5 Heat oil in a pan, add the ground paste & sauté for three to four mins.
  • Step #6 Add tomato puree, salt & continue to sauté for a couple of mins.
  • Step #7 Add red chilli powder, cumin powder & coriander powder & sauté till oil begins to leave the masala.
  • Step #8 Stir & add sliced baby corn, paneer pieces, garam masala powder & mix well.
  • Step #9 Cover up & cook on low heat for five mins.
  • Step #10 Lightly roast kasuri methi & crush.
  • Step #11 Sprinkle top over the gravy.
  • Step #12 Serve hot.
