Crispyegetable Pakoras Recipe

Ingredients
  • 1/2 head cauliflower florets
  • 3/4 c water
  • 1/2 tsp ground turmeric
  • 1 quart oil for deep frying
  • 2 onions, sliced into rings
  • 1/2 tsp chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp ground coriander
  • 1 c chickpea flour
  • 2 cloves garlic, crushed
  • 1 tsp salt

Directions
  • Step #1 Sift the chickpea flour into a medium bowl.
  • Step #2 Mix in the coriander, salt, turmeric, chili powder, garam masala & garlic.
  • Step #3 Make a well in the center of the flower.
  • Step #4 Gradually pour the water into the well & mix to form a thick, smooth batter.
  • Step #5 Over medium high heat in a large, heavy saucepan, heat the oil to 375 degrees F (190 degrees C).
  • Step #6 Coat the cauliflower & onions in the batter & fry them in small batches until golden brown, about 4 to 5 mins.
  • Step #7 Drain on paper towels before serving.
