French Canadian Carleton Sur Mer Fish Chowder (low Fat) Recipe

Ingredients
  • soy bacon bits or bacon bits or sweet paprika .
  • 2 c mineral water .
  • 1 large onion, sliced .
  • 1 tbsp oil .
  • 1 carrot, sliced .
  • GARNISH .
  • 1/4 c fresh parsley .
  • 2 c milk (any kind of per cent you want to use) .
  • black pepper, freshly ground .
  • 1/3 c celery, sliced .
  • 1/2 c sweet red peppers, sliced .
  • 1 dash dried dill or cumin .
  • 1 c corn kernels (frozen or canned) .
  • 1 garlic clove, minced .
  • 1 lb fish (fresh or frozen) .
  • 3 potatoes, sliced (1 lb/500g)

Directions
  • Step #1 In a saucepan, cook the onion in the oil for 5 mins over low heat/flame until transparent but not brown.
  • Step #2 Add garlic, potatoes, red pepper, carrot, celery & water.
  • Step #3 Simmer, covered, until potatoes are almost tender (about 15 mins).
  • Step #4 Cut fish into chunks & add to saucepan.
  • Step #5 Cook, for 3 mins for fresh fish, covered, 10 mins for frozen.
  • Step #6 Add cumin or dill, 1 %, milk (skim, parsley, 2 % or whole milk) & corn.
  • Step #7 Spice up with pepper to taste.
  • Step #8 Heat but do not boil.
  • Step #9 Serve as soon as possible with toasted whole wheat bread or unsalted cream crackers.
  • Step #10 Offer guests paprika or bacon for light dusting.
  • Step #11 Serves 4 to 6.
