Simple Vegetable Stock Recipe

Ingredients
  • 2 bay leaves .
  • Bouquet garni .
  • 8 parsley sprigs .
  • tarragon .
  • 2 onions, sliced .
  • 2 tbsps unsalted butter .
  • savory .
  • basil .
  • 10 c cold water .
  • 4 leeks, see note .
  • chervil .
  • 2 celery ribs, sliced .
  • 2 carrots, sliced

Directions
  • Step #1 Notes: Use only white part of leeks.
  • Step #2 Split lenghtwise, rinse & chop.
  • Step #3 Wrap the bouquet garni in cheesecloth & tie with string.
  • Step #4 Note you can use other herbs but make sure they compliment what you plan to use this inches.
  • Step #5 Over medium high heat, saute the vegetables in butter until soft but not brown.
  • Step #6 About 4 mins.
  • Step #7 Add the water & bring to a boil.
  • Step #8 Add the garni & let simmer uncovered for 2 hrs.
  • Step #9 Remove from heat & let rest 10 mins.
  • Step #10 Strain though a strainer lined with several layers of cheesecloth.
  • Step #11 Discard solids.
  • Step #12 Cool to about room temp Store, covered in refrigerator.
  • Step #13 USE WITHIN 24 HOURS.
  • Step #14 DOES NOT FREEZE WELL.
