Pear Chutney Recipe

Ingredients
  • 3 lbs bartlett pears, unpeeled, cored, sliced (about 7 c) .
  • 1/2 tsp cayenne pepper .
  • 1 onion, medium, sliced .
  • 2 tsps salt .
  • 1/2 tsp ground cloves .
  • 1 lb brown sugar .
  • 2 c cider vinegar .
  • 1 c golden raisins .
  • 1/4 c preserved gingerroot, sliced .
  • 1/2 tsp ground cinnamon .
  • 2 tsps mustard seeds .
  • 1 garlic clove, minced

Directions
  • Step #1 Combine brown sugar & vinegar in large saucepan & bring to boil.
  • Step #2 Add sliced pears & all other ingredients.
  • Step #3 Cook slowly, stirring from time to time, until mixture is thick, about 1 hr.
  • Step #4 Either pour chutney into hot, sterilized jars & seal, OR keep covered in refrigerator 3-4 weeks.
  • Step #5 Can be used as a side with lamb or ham or as an appetizer with cream cheese & crackers.
