Steamed Chicken With Scallion-ginger Dressing And Rice Salad Recipe

Ingredients
  • 1/4 c fresh cilantro, sliced .
  • 1 tsp sesame oil .
  • 1 dash sesame oil .
  • 2 tbsps good soy sauce .
  • 1 c rice .
  • 1 tbsp minced ginger .
  • 1/4 c extra virgin olive oil .
  • Dressing .
  • 1/4 c scallions (sliced into 1/4 inch pieces, white & green) .
  • 2 tbsps olive oil .
  • 1/2 sweet red pepper, cubed (1/2 inch cubes) .
  • 4 boneless chicken breast halves .
  • 1/4 c fresh lime juice (to taste) .
  • 1/2 c minced fresh cilantro .
  • 1 c frozen peas .
  • ground black pepper .
  • Rice salad .
  • 1/4 c finely minced shallots .
  • 1 dash lime juice .
  • 2 tbsps good soy sauce

Directions
  • Step #1 **For rice salad**.
  • Step #2 Add peas to boiling water & cook 2 - 4 mins.
  • Step #3 Drain.
  • Step #4 Cook rice according to directions.
  • Step #5 Add minced shallot to the rice.
  • Step #6 Stir.
  • Step #7 Add lime juice, oil, & soy.
  • Step #8 Stir.
  • Step #9 Add cilantro, red pepper, peas, & ground black pepper.
  • Step #10 Stir.
  • Step #11 Taste & adjust seasonings if necessary (lime juice, soy, or pepper.
  • Step #12 ).
  • Step #13 You can serve this warm or at about room temp.
  • Step #14 **For chicken**.
  • Step #15 Steam chicken over simmering water for 10 - 15 mins depending on the size of the breasts.
  • Step #16 **For scallion-ginger sauce**.
  • Step #17 While the chicken is cooking, scallions, sesame oil, oil, soy sauce, make the dressing by combining the minced ginger, lime juice & cilantro.
  • Step #18 **To serve**.
  • Step #19 On a bed of the rice salad, place the chicken breasts.
  • Step #20 Spoon over the scallion ginger sauce.
