Confetti Scalloped Potatoes Recipe

Ingredients
  • 1 c crushed cheese flavored crackers, divided
  • 1/2 c sliced green onion
  • 1 dash pepper
  • 1 small green bell pepper, cut into thin strips
  • 1 c shredded Cheddar cheese
  • 1/2 c butter
  • 1 1/3 c milk
  • 1 (16 oz) package frozen hash brown potatoes, thawed
  • 1 (10.75 oz) can condensed cream of mushroom soup

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Melt butter in a large skillet over med-heat/flame.
  • Step #3 Saute onion until tender.
  • Step #4 Stir in potatoes, black pepper, milk, cheese, bell pepper, soup, & 1/2 c cracker crumbs.
  • Step #5 Transfer to a 2 quart casserole dish & top this with remaining cracker crumbs.
  • Step #6 Bake in preheated oven for 35 to 40 mins.
