Ham And Egg Enchiladas Recipe

Ingredients
  • 3 scallions, sliced .
  • 8 eggs .
  • 8 flour tortillas .
  • 1 avocado, cut into 8 slices .
  • 8 oz sliced black olives, drained .
  • 1/2 c ham, sliced .
  • 8 oz monterey jack pepper cheese .
  • 1/2 c salsa .
  • 2 tbsps butter .
  • 10 oz enchilada sauce .
  • 1 red bell pepper, sliced .
  • 1/2 c sour cream

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Melt butter in large nonstick skillet over med-heat/flame.
  • Step #3 Add bell pepper & onions, cook & stir 2 mins.
  • Step #4 Add ham & olives; cook & stir for 1 min.
  • Step #5 Lightly beat eggs with wire whisk in medium bowl.
  • Step #6 Add eggs to skillet; cook this until eggs are set but still soft.
  • Step #7 Spoon 1/3 c egg mixture evenly down center of each tortilla; top this with 1 Tbl cheese.
  • Step #8 Roll tortillas up & place seam side down in 11x7 baking dish.
  • Step #9 Combine enchilada sauce & salsa together & pour evenly over enchiladas.
  • Step #10 Cover up with foil wrap & bake 20 mins; uncover & sprinkle with remaining cheese.
  • Step #11 Bake an extra 10 mins, uncovered.
  • Step #12 Serve each enchilada with a slice of avocado & 1 T sour cream.
