Chicken Alfredo Recipe

Ingredients
  • 6 tbsps butter
  • 2 small zucchini, julienned
  • salt & pepper to taste
  • 2 c sliced fresh broccoli
  • 1/2 c sliced red bell pepper
  • 6 oz dry fettuccine pasta
  • 1/2 tsp garlic powder
  • 2 skinless, boneless chicken breast halves - cooked & cubed
  • 1/2 c milk
  • 1 (8 oz) package cream cheese

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Add pasta, & cook for 8 to 10 mins, or until al dente; drain.
  • Step #3 While pasta is cooking, melt cream cheese & butter in a skillet over low heat/flame.
  • Step #4 Stir until smooth.
  • Step #5 Stir in milk, salt, & season this with garlic powder, & pepper.
  • Step #6 Simmer for 3 mins, or until thickened, stirring constantly.
  • Step #7 Mix in chicken, zucchini, broccoli, & red pepper.
  • Step #8 Cook 3 mins over med-heat/flame, & let simmer 5 mins, then reduce heat, or until vegetables are tender.
  • Step #9 Serve over fettuccine.
