Currant-glazed Salmon Recipe

Ingredients
  • 1 orange, juice & zest of .
  • 1 tbsp olive oil .
  • 1 tbsp orange-flavored liqueur, like Triple Sec .
  • 3 medium garlic cloves, peeled & sliced .
  • 1/2 c currant jelly .
  • 1 (3 lb) salmon fillets

Directions
  • Step #1 Preheat oven to 450 degrees.
  • Step #2 Sprinkle top salmon fillet with 1 tsps salt & 1/4 tsps pepper.
  • Step #3 Place on foil wrap-lined baking sheet coated with cooking spray.
  • Step #4 Roast salmon 25 mins, or until nearly opaque.
  • Step #5 Heat broiler.
  • Step #6 Meanwhile while salmon is roasting, in a small saucepan over med-heat/flame, cook garlic in oil for 2 mins, or until slightly browned.
  • Step #7 Stir in currant jelly, liqueur, & 1 Tbs.
  • Step #8 orange juice.
  • Step #9 Increase heat to high; bring to a boil.
  • Step #10 Cook 8 mins more, or until mixture thickens & can coat back of spoon.
  • Step #11 Stir in 1 Tbs.
  • Step #12 orange zest.
  • Step #13 Spoon 1/2 currant-orange mixture over salmon fillet.
  • Step #14 Broil salmon 3 mins, or until golden.
  • Step #15 Transfer salmon to serving platter.
  • Step #16 Serve with remaining currant sauce.
  • Step #17 If desired, garnish with kumquats, berries & citrus curls.
