Apple Juice Roast Beef Recipe

Ingredients
  • 4 lbs boneless beef chuck roast .
  • gravy .
  • 3 sweet potatoes .
  • 1 tsp salt .
  • 2 tbsps butter .
  • 1/4 tsp prepared mustard .
  • 1 apple ring .
  • 1 lemon juice .
  • 1 tbsp catsup .
  • 1 c apple juice .
  • parsley .
  • 2 onions, sliced .
  • 1/4 tsp pepper .
  • 1/4 tsp thyme leaves .
  • 1/8 tsp basil leaves

Directions
  • Step #1 Cook onions in 1 tbsp butter or shortening in Dutch oven until tender-crisp; set aside.
  • Step #2 Brown roast in remaining butter or shortening in Dutch oven over med-heat/flame 15 to 20 mins or until browned on both sides.
  • Step #3 Pierce entire surface of meat with fork.
  • Step #4 Combine apple juice, catsup, pepper, salt, thyme, mustard & basil; add to meat.
  • Step #5 Top meat with reserved cooked onions; cover & cook slowly 2 1/2 hrs or until almost tender.
  • Step #6 Brush sweet potatoes with lemon juice for bright color; add to meat.
  • Step #7 Continue cooking, covered, 30 to 40 mins or until meat & potatoes are tender.
  • Step #8 Place meat & potatoes on warm platter.
  • Step #9 Sprinkle top potatoes with sliced parsley or garinish with apple rings & parsley, if desired.
  • Step #10 Serve gravy over sliced meat.
