Step #1 Cook onions in 1 tbsp butter or shortening in Dutch oven until tender-crisp; set aside.
Step #2 Brown roast in remaining butter or shortening in Dutch oven over med-heat/flame 15 to 20 mins or until browned on both sides.
Step #3 Pierce entire surface of meat with fork.
Step #4 Combine apple juice, catsup, pepper, salt, thyme, mustard & basil; add to meat.
Step #5 Top meat with reserved cooked onions; cover & cook slowly 2 1/2 hrs or until almost tender.
Step #6 Brush sweet potatoes with lemon juice for bright color; add to meat.
Step #7 Continue cooking, covered, 30 to 40 mins or until meat & potatoes are tender.
Step #8 Place meat & potatoes on warm platter.
Step #9 Sprinkle top potatoes with sliced parsley or garinish with apple rings & parsley, if desired.
Step #10 Serve gravy over sliced meat.
