Microwave Caramel Corn Recipe

Ingredients
  • 5 c popcorn, popped .
  • 3 tbsps dark corn syrup .
  • salt .
  • 1/2 tsp vanilla .
  • 1/3 c shelled peanuts (optional) .
  • 1/4 tsp baking soda .
  • 3/4 c brown sugar, packed .
  • 3 tbsps butter or margarine

Directions
  • Step #1 Place butter or margarine in a 8 c measure or large microwavable bowl.
  • Step #2 Microwave at high for 30-45 seconds, or until melted.
  • Step #3 Stir in brown sugar, peanuts(optional) & corn syrup.
  • Step #4 Insert candy thermometer.
  • Step #5 Microwave at high for 3-4 mins, or until mixture reaches 280 degrees (soft crack stage).
  • Step #6 (Note- this is where the mixture can overcook - so watch carefully).
  • Step #7 Mix in vanilla, baking soda & salt.
  • Step #8 Place prepared popcorn in large bowl.
  • Step #9 Pour hot mixture quickly over popcorn, stirring to coat.
  • Step #10 Microwave at high for 2 mins, stirring after half the time.
  • Step #11 Stir again.
  • Step #12 Cool for about 30 mins.
  • Step #13 Stirring every once in awhile to break apart.
  • Step #14 I find it helpful, to spread caramel corn on a cookie sheet to cool.
  • Step #15 It cools much faster & is easier to break apart.
