St. Paddy's Day Potato & Leek Soup Recipe

Ingredients
  • 1/4 c margarine .
  • 1 tsp salt .
  • 1 1/2 c leeks .
  • 1 1/2 c potatoes .
  • 1 garlic clove .
  • 1 c whipping cream .
  • 1/4 tsp pepper .
  • 4 c chicken broth .
  • 1/2 c onions

Directions
  • Step #1 Use only the white part of the leeks.
  • Step #2 Saute the sliced leeks,sliced onions, & 1 clove of minced garlic in margarine until translucent.
  • Step #3 Add the chicken broth & the peeled & sliced potatoes to the mixture, & cook this until potatoes are tender.
  • Step #4 Puree mixture in mixer half at a time.
  • Step #5 Place in large soup pot & add cream,salt & pepper.
  • Step #6 Cook stirring every once in awhile until hot.
  • Step #7 Garnish as desired & serve.
