4 very firm d' anjou pears, peeled, cored & thinly sliced .
1 1/2 tsps ground cinnamon .
1 1/4 tsps salt .
1 tsp baking soda .
1/4 c molasses .
1/4 tsp ground allspice .
1 1/2 tsps ground ginger .
3/4 tsp ground cloves .
3 c all-purpose flour
Directions
Step #1 Preheat oven to 350F (I baked at 325F convection).
Step #2 Generously grease two large (9X5-inch) loaf pans--the long pieces of pear make the loaves more susceptible to sticking in the pans & falling apart, so make sure you grease generously.
Step #3 (I lined the bottom & sides with a long piece of greased waxed paper, leaving enough extra at the sides to lift the loaf out of the pan.
Step #4 ).
Step #5 In a large bowl, cinnamon, vegetable oil, & eggs; mix in salt, ginger, molasses, baking soda, mix brown sugar, cloves, & allspice.
Step #6 Stir the pear slices in, coating them evenly; stir in the the flour.
Step #7 Pour batter into prepared loaf pans.
Step #8 Bake for 50-65 mins (I baked mine right around 60 mins).
Step #9 Allow loaves to cool in pan about ten mins before removing them & placing them on a wire rack to cool.
Step #10 Note: I halved the recipe, making one loaf, & used 1 whole egg & 1 egg white.
