Step #1 Moosh the onions, mushrooms, spinach, carrots & beans & seasonings in the food processor/blender (or you can just chop them up really fine).
Step #2 *You can use up almost any little bits of leftover veggies - as long as you chop them up fine enough! Try: fresh parsley, dill is nice, squash, steak seasoning, basil, zucchini, parsnips, mashed yams --
Put all ingredients (except the ketchup, worchestershire sauce, vinegar & brown sugar) into a large bowl or into the bowl of your mixer & mix together.
Step #3 Mix ketchup, vinegar & brown sugar & spread it on the top of the loaf in the last 30 mins of cooking.
Step #4 Shape into a loaf & bake this at 375 degrees F 60 - 90 mins - till it reaches an internal temp of 170°F.
Step #5 This is enough for two smaller loaves or one big loaf & a batch of meatballs.
