6 Point Assorted Vegetable Meatloaf (with Meat!) Recipe

Ingredients
  • 2 tsps kosher salt .
  • 1 tbsp cider vinegar .
  • 3 tbsps wheat germ .
  • 1 tbsp chili powder .
  • 1/4 c rice, cooked & cold (leftover is best, 1 c cooked) .
  • 1 lb lean ground beef .
  • 1/2 lb ground lean pork (you can use chicken, turkey, veal... just something to broaden the flavour a bit) .
  • 1/2 lb mushrooms, pureed .
  • 2 large eggs .
  • 1 onion, minced .
  • 1 tsp brown sugar .
  • 4 tbsps ketchup .
  • 1/3 c white beans, cooked & cold (leftover) .
  • 1 tbsp italian seasoning .
  • 2 garlic cloves, minced .
  • 1/2 c grated carrots .
  • 1/2 tsp fresh ground black pepper .
  • 1/2 lb fresh spinach (or 1 package frozen & drained)

Directions
  • Step #1 Moosh the onions, mushrooms, spinach, carrots & beans & seasonings in the food processor/blender (or you can just chop them up really fine).
  • Step #2 *You can use up almost any little bits of leftover veggies - as long as you chop them up fine enough! Try: fresh parsley, dill is nice, squash, steak seasoning, basil, zucchini, parsnips, mashed yams -- Put all ingredients (except the ketchup, worchestershire sauce, vinegar & brown sugar) into a large bowl or into the bowl of your mixer & mix together.
  • Step #3 Mix ketchup, vinegar & brown sugar & spread it on the top of the loaf in the last 30 mins of cooking.
  • Step #4 Shape into a loaf & bake this at 375 degrees F 60 - 90 mins - till it reaches an internal temp of 170°F.
  • Step #5 This is enough for two smaller loaves or one big loaf & a batch of meatballs.
