Chocolate Mint Candies Cookies Recipe

Ingredients
  • 1/2 tsp salt
  • 2 tbsps water
  • 3 (4.5 oz) packages chocolate covered thin mints
  • 2 eggs
  • 1 1/4 tsps baking soda
  • 2 c semisweet chocolate chips
  • 2 1/2 c all-purpose flour
  • 1 1/2 c brown sugar
  • 3/4 c butter

Directions
  • Step #1 In a saucepan over med-heat/flame, cook the sugar, butter & water, stirring every once in awhile until melted.
  • Step #2 Remove from heat, stir in the the chocolate chips until melted & set aside to cool for 10 mins.
  • Step #3 Pour the chocolate mixture into a large bowl, & beat in the eggs, one at a time.
  • Step #4 Combine the flour, baking soda & salt, stir in theto the chocolate mixture.
  • Step #5 Cover & put in the fridge dough for at least 1 hr.
  • Step #6 Preheat oven to 350 degrees F (175 degrees C).
  • Step #7 Grease cookie sheets.
  • Step #8 Roll cookie dough into walnut sized balls & place 2 inches apart onto the prepared cookie sheets.
  • Step #9 Bake for 8 to 10 mins in the preheated oven, be careful not to overbake.
  • Step #10 When cookies come out of the oven, Press one mint wafer into the top of each cookie & let sit for 1 min.
  • Step #11 When the mint is softened, swirl with the back of a spoon or toothpick to make a pattern with the green filling of the mint wafer.
  • Step #12 For smaller cookies, break mints in half.
