Chicken With A Bang Recipe

Ingredients
  • 1/2 c all-purpose flour
  • 2 tbsps vegetable oil
  • 36 blue corn tortilla chips
  • 6 skinless, boneless chicken breast halves
  • 1/2 c white wine
  • 1 red bell pepper, sliced
  • 2 fresh jalapeno peppers, sliced into rings
  • 12 slices bacon
  • 1 c whole kernel corn
  • 1 tsp freshly ground black pepper
  • 1 1/2 c shredded Cheddar cheese
  • 1 1/2 c uncooked white rice

Directions
  • Step #1 In a saucepan bring 3 c water to a boil.
  • Step #2 Add rice & stir.
  • Step #3 Reduce heat, cover & let simmer for 20 mins.
  • Step #4 Using a rolling pin wrapped in plastic, lb out chicken breasts to about 1/2 inch in thickness.
  • Step #5 In the center of the breast place 2 or 3 slices of jalapeno & 3 tbsps of cheese.
  • Step #6 Roll chicken up from the narrowest point to the widest.
  • Step #7 Wrap with 2 slices of bacon & secure with toothpicks.
  • Step #8 Heat oil & black pepper in a deep skillet over medium high heat.
  • Step #9 Cook chicken wraps until they begin to brown.
  • Step #10 Reduce heat, checking periodically, cover & cook an extra 10 to 15 mins, until chicken is no longer pink inside.
  • Step #11 Remove chicken from heat, cover & set aside.
  • Step #12 Return skillet to medium high heat.
  • Step #13 To the drippings add flour, stirring to remove any lumps.
  • Step #14 Slowly add wine, stirring constantly until sauce thickens.
  • Step #15 Remove from heat.
  • Step #16 In a small bowl mix red bell pepper & corn.
  • Step #17 Place a medium sized mound of rice in the center of a plate.
  • Step #18 Tuck a few blue corn chips along the edge of the rice.
  • Step #19 Place chicken on rice, spoon sauce over chicken & sprinkle with 3 tbsps of red pepper & corn mixture.
