Hand Pies (pasties) Recipe

Ingredients
  • 1 large celery rib, sliced .
  • 1 large carrot, peeled & finely sliced .
  • 1 medium parsnip, peeled & finely sliced (optional) .
  • 1 large potato, peeled & finely sliced .
  • 1/2 lb bulk pork sausage (optional) .
  • 2 ready-made pie crusts (usually sold 2 to a package) .
  • 1 medium onion, peeled & sliced

Directions
  • Step #1 Bring pie crust out & to about room temp.
  • Step #2 Preheat oven to 350 degrees.
  • Step #3 Lightly grease, spray or use parchment on a large baking sheet.
  • Step #4 Mix vegetables, & pork sausage if using.
  • Step #5 Don't precook the sausage - it will cook when the pies bake.
  • Step #6 Cut crust into small circles, about 2-3 inches across.
  • Step #7 You should be able to get five or six circles out of each crust if you re-roll the pastry leftovers.
  • Step #8 Place an equal amount of the filling on half of the circles, & top this with another circle.
  • Step #9 Fold the edges over each other towards the top, & crimp together like a traditional pie crust.
  • Step #10 Make a small slit in the center to vent steam, & brush with an egg wash if you like.
  • Step #11 Place each little pie on the prepared baking sheet, & bake for approximately one hr, checking for over-browning.
  • Step #12 Can be eaten hot or cold.
