Chicken Piccataii Recipe

Ingredients
  • salt & pepper to taste
  • 1 (14 oz) can artichoke hearts, drained & quartered
  • 1/2 tsp paprika
  • 1/4 c lemon juice
  • 1 c all-purpose flour
  • 1 lb skinless, boneless chicken breast halves - cut into thin strips
  • 3/4 c chicken stock
  • 4 oz fresh mushrooms, sliced
  • 1/2 tsp garlic powder
  • 1/4 c vegetable oil

Directions
  • Step #1 In a shallow bowl, paprika, mix together flour, & salt & pepper.
  • Step #2 Dredge chicken pieces in the seasoned flour.
  • Step #3 Heat oil in a large skillet over med-heat/flame, & saute chicken until light golden brown (about 45 seconds each side).
  • Step #4 Remove chicken from skillet, & set aside.
  • Step #5 To skillet, add mushrooms, lemon juice, & chicken stock.
  • Step #6 Simmer until a smooth, light sauce develops.
  • Step #7 Spice up with garlic powder.
  • Step #8 Return chicken to the skillet, & let simmer until chicken is no longer pink & juices run clear.
  • Step #9 Stir in artichoke hearts, & remove this from heat.
