Ingredients
salt & pepper to taste
1 (14 oz) can artichoke hearts, drained & quartered
1/2 tsp paprika
1/4 c lemon juice
1 c all-purpose flour
1 lb skinless, boneless chicken breast halves - cut into thin strips
3/4 c chicken stock
4 oz fresh mushrooms, sliced
1/2 tsp garlic powder
1/4 c vegetable oil
Directions
Step #1 In a shallow bowl, paprika, mix together flour, & salt & pepper.
Step #2 Dredge chicken pieces in the seasoned flour.
Step #3 Heat oil in a large skillet over med-heat/flame, & saute chicken until light golden brown (about 45 seconds each side).
Step #4 Remove chicken from skillet, & set aside.
Step #5 To skillet, add mushrooms, lemon juice, & chicken stock.
Step #6 Simmer until a smooth, light sauce develops.
Step #7 Spice up with garlic powder.
Step #8 Return chicken to the skillet, & let simmer until chicken is no longer pink & juices run clear.
Step #9 Stir in artichoke hearts, & remove this from heat.
Step #10 .
