Creamy Garlic Escargot Recipe

Ingredients
  • 1 quart heavy whipping cream
  • salt & pepper to taste
  • 32 helix snails, without shells
  • 2 tbsps minced garlic
  • 1 tbsp melted butter
  • 4 tsps butter or margarine, melted
  • 4 sheets phyllo dough
  • 4 egg yolks

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly spray a ccake pan with non-stick cooking spray.
  • Step #3 Place the phyllo dough on a flat surface & brush each sheet with the melted butter.
  • Step #4 Layer the sheets on top of one another & cut the pile into fours.
  • Step #5 Push each piece of dough into a ccake pan, forming c with the dough.
  • Step #6 Bake the phyllo c for 10 to 15 mins, until golden.
  • Step #7 Drain the snails & rinse them with running water until the liquid runs clear.
  • Step #8 In a small bowl, mix together the egg yolks & heavy cream.
  • Step #9 Heat a saute pan, add 4 tbsps of butter, the garlic & then the snails.
  • Step #10 Saute for a couple of mins & then add half of the heavy cream mixture.
  • Step #11 Bring to a boil & season this with the salt & pepper.
  • Step #12 The sauce will thicken while cooling.
  • Step #13 Remove the phyllo c from the muffin tins.
  • Step #14 Place a phyllo c on a plate or bowl & put 8 escargot in the c & flowing out of the c.
  • Step #15 Pour the sauce in the c over the escargot.
