Chocolate Raisin Biscuits- Gluten Free Recipe

Ingredients
  • 1 tsp baking powder .
  • 150 g butter, softened .
  • 1 egg .
  • 1 1/2 c gluten-free flour .
  • 100 g raisins, roughly sliced .
  • 200 g milk chocolate or dark chocolate, sliced .
  • 1/3 c brown sugar

Directions
  • Step #1 Preheat the oven to 170 degrees Centigrade.
  • Step #2 Line biscuit trays with baking paper.
  • Step #3 Melt half of the chocolate & set aside to cool.
  • Step #4 Beat the butter & sugar until pale & creamy.
  • Step #5 Add the egg & beat well.
  • Step #6 Stir in the melted chocolate.
  • Step #7 Sift in the flour & baking powder.
  • Step #8 Stir carefully to mix.
  • Step #9 Fold into the mix the remaining sliced chocolate & the shopped raisins.
  • Step #10 Refrigerate for 30 mins or until firm.
  • Step #11 Roll tbspfuls of the mixture into balls & then place onto the trays.
  • Step #12 Flatten with the back of a metal spoon.
  • Step #13 Bake 15-20 mins or until golden.
  • Step #14 Stand 5 mins before transferring to a wire rack to cool.
