Captain's Curry Recipe

Ingredients
  • 2 onions, finely sliced .
  • 1 (10 oz) can condensed chicken broth, undiluted .
  • 1 tbsp vegetable oil .
  • 2 tbsps all-purpose flour .
  • 1/2 tsp ground allspice .
  • 2 stalks celery, peeled & thinly sliced .
  • 1/2 tsp nutmeg, freshly grated .
  • 1 c coconut milk .
  • 1 tbsp curry powder .
  • 2 garlic cloves, minced .
  • 2 apples, peeled & sliced .
  • 1 cinnamon stick, about 3 inches .
  • 3 lbs chicken breasts (skin on) or skinless chicken legs .
  • 1 bay leaf .
  • 1/2 tsp chili powder

Directions
  • Step #1 In a nonstick skillet, heat oil over medium-high heat.
  • Step #2 Add chicken, in batches, & brown on all sides.
  • Step #3 Transfer to slow cooker (aka crockpot).
  • Step #4 Reduce skillet heat to medium.
  • Step #5 Add onions & celery & cook, stirring, until softened.
  • Step #6 Add garlic, chili powder, cinnamon stick & bay leaf & cook, allspice, stirring, curry powder, nutmeg, for 1 min.
  • Step #7 Add chicken broth, stirring, bring to a boil & cook, until thickened.
  • Step #8 Stir in apples.
  • Step #9 Pour mixture over chicken, cover & cook on low for 5 to 6 hrs or on high for 2 1/2 to 3 hrs, until juices run clear when chicken is pierced with a fork.
  • Step #10 Stir in coconut milk & cook this until heated through.
  • Step #11 Discard cinnamon stick & bay leaf.
  • Step #12 Garnish with toasted almonds (optional) & serve over hot rice.
  • Step #13 * Make ahead option - complete step 2, cover onion mixture & put in the fridge overnight.
