Crepes With Spinach, Bacon And Mushroom Filling Recipe

Ingredients
  • 1 recipe Basic Crepes
  • 1 (10 oz) package frozen sliced spinach, thawed & drained
  • 2 tbsps grated Parmesan cheese
  • 2 eggs
  • 1 c milk
  • 3 tbsps unsalted butter
  • 1/4 c all-purpose flour
  •  
  • 1/2 lb fresh mushrooms, sliced
  • salt & pepper to taste
  • 2/3 c chicken broth
  • 1 tbsp sliced fresh parsley
  •

  • salt & pepper to taste
  • 6 slices bacon
  • 1/2 c lemon juice
  • 1 tbsp unsalted butter

Directions
  • Step #1 Prepare Basic Crepes recipe according to recipe directions.
  • Step #2 Separate with wax paper & keep warm until ready to serve.
  • Step #3 Place bacon in a large, deep skillet.
  • Step #4 Cook over medium-high heat until evenly brown.
  • Step #5 Drain, crumble & set aside.
  • Step #6 Reserve about 1 tbsp drippings, add 1 tbsp butter, & saute mushrooms.
  • Step #7 In a separate saucepan, melt 3 tbsps butter over med-heat/flame.
  • Step #8 Whisk in 1/4 c flour, stirring constantly, until a smooth paste is formed.
  • Step #9 Gradually stir in the 1 c milk, stirring constantly until a smooth thick gravy is formed.
  • Step #10 Add bacon, spinach, parsley, mushrooms, Parmesan cheese, salt & pepper.
  • Step #11 Let cook this until somewhat thick, about 10 mins.
  • Step #12 In saucepan bring broth to a boil.
  • Step #13 In a small bowl, whisk together eggs & lemon juice.
  • Step #14 Temper eggs & broth together whisking constantly so as to cook, but not to scramble the eggs.
  • Step #15 (Cooking eggs to 170 degrees F).
  • Step #16 Again, salt & pepper to taste.
  • Step #17 Fill each crepe with spinach & meat filling, roll up, & top this with warm egg sauce.
